Stuffed Red Peppers

Ingredients
- ½ c. quinoa
- 1c. water
- Olive oil
- ½ white onion, chopped
- 2 cloves garlic, chopped
- ½ c. marinara sauce
- Spices (e.g. basil, oregano, salt, pepper)
- ½ block firm tofu
- Cheese
- 2 red peppers
Directions:
- Bring water and quinoa to boil in small pot
- Heat oil in saucepan. Sauté onion, garlic and tofu with spices
- When quinoa is almost ready, roast cored red peppers in the saucepan
- Remove red peppers from heat; add quinoa and marinara sauce to pan.
- Layer cheese and quinoa mixture in peppers
Tips:
- Be creative with the ingredients used to stuff peppers
- Portions included serve two people
