Special Scrambled Eggs

Ingredients
- Eggs (2-3)
- Chopped vegetables (red pepper, onion, etc.)
- Oil
- Milk
- Baked potato (pre-cooked)
Directions:
- Cut vegetables into bite size pieces
- Add oil and stir fry on medium heat until soft
- Chop baked potato and add to pan
- Scramble eggs with milk and add to pan
- Stir constantly until eggs are cooked
Tips:
- Use baked potatoes from the night before to save on cooking time
