Roasted Eggplant

Ingredients

  • Eggplant, sliced horizontally
  • Garlic spread
  • Salt & pepper

Directions:

  1. Marinade eggplant in garlic spread
  2. Roast eggplant over the campfire/stove until golden brown
  3. Sprinkle with salt & pepper

Tips:

  • Serve with rice or on a sandwich
